6-8 medium sized sweet potatoes
1/4 cup butter
1/2 cup brown sugar
1/2 tsp vanilla
A dash of cinnamon
1/2 bag of large marshmallows
First, bring water to boil in large pot, and pre-heat oven to 350 degrees. Next clean, peel, and slice sweet potatoes into pieces about 1/2-inch thick. Drop these pieces into boiling water. Return to boil for 15-20 minutes, or until they fall off a fork. Remove from boil and drain excess water.
Mash and then whip sweet potatoes in the pot (or bowl) using a hand mixer. Then mix in the butter, brown sugar, vanilla and cinnamon. Transfer the mixture to an oven-safe dish and cover the top with marshmallows. Place in over and cook for 20 minutes, or until marshmallows expand and turn golden brown.
