Ingredients
1 large hothouse cucumber, sliced and then quartered
2 cups arugula
2 T. fresh mint
1 lemon, juiced and zested
1 cup feta cheese
1/2 cup kalamata olives, pitted and halved
6 radishes, thinly sliced
1 tsp. honey
1 T. salt
1/2 T. white vinegar
Pepper to taste
Instructions
1. Place arugula and mint in a food processor and pulse until finely chopped.
2. Toss the chopped arugula, chopped mint, cucumbers, radishes, lemon juice, lemon zest, feta cheese, kalamata olives, honey, salt, and white vinegar in a large mixing bowl. Add pepper to taste. Looks good, tastes even better!
