Ingredients
2 lbs. ground beef or ground turkey
1 large onion chopped
2 cans Rotel Mexican (this style of Rotel includes diced tomatoes w/lime juice, cilantro and diced green chilies)
2 cans pinto beans (or) ranch beans
2 cans chick peas (or) blackeye peas
1 can corn
1 can tomato soup
1 pkg. dry taco seasoning
1 pkg. dry ranch seasoning (or) dry ranch dressing
Garnishes
shredded cheddar cheese
sour cream
Instructions
Brown ground beef or turkey and drain fat. Rinse with water and drain again for less fat content if desired. Follow the dry taco seasoning directions by adding 3/4 cups of water to meat along with taco seasoning and dry ranch seasoning. Mix and bring to a boil. Add all remaining ingredients including liquid from cans. Simmer covered in a slow cooker or crock pot until hot to serve. Serve with taco chips and top with shredded cheddar cheese and sour cream.
